雪花忘不了王中王, also known as Empurau Royal Super King, is a native fish to the upper section of the Rajang River in Sarawak, Malaysia. Empurau is ranked 1st in the top 10 freshwater fish in Malaysia. Even within the ranks of Empuraus, only the cream of the crop is named Empurau Royal Super King.
Wild Empurau is crafty and is one of the fastest fish in the Rajang River, contributing to its value as the most expensive freshwater fish due to the increased difficulty in catching them.
Empuraus grow very slowly; in the first year, it weighs about 4.5 grams. In the second year, it grows to between 1 to 2 kilograms and about 3 to 5 kilograms in three years’ time. Empuraus below 3kg are considered fish fry, while those above 3kg are then considered adult fish. Therefore, a large wild Empurau is rare and difficult to come by. A 7kg wild Empurau will be at least 10 years old.
Generally, the best tasting Empuraus weigh between 5 to 10kg and are usually recommended.
The wild Empurau has three characteristics: sharp head, convex head and back, small hump outside the connection between head and back and observable fish belly.
Wild Empurau’ s diet consists mainly of the Combretocarpus (commonly known as windmill fruit in Chinese or Emkabang in Malay), and this results in the meat of the fish containing a tinge of the fruit’s flavour. This is why the local populace calls the fish “Unforgettable” or 忘不了. Steaming and roasting is the ideal cooking method for such a priced delicacy.
The Empuraus’ scales can be fried and served as another dish resembling potato chips, to go along with the fish.

野生忘不了很狡猾,是拉江河速度最快的鱼之一。由于捕获难度的增加,忘不了的价格就相对的增加。
忘不了生长非常缓慢;第一年,它的重量约为4.5克。在第二年,它会增长到1至2公斤,在三年后长到3至5公斤。3公斤以下的忘不了被视为鱼苗,而3公斤以上的忘不了才被视为成年鱼。因此,一只大型的野生忘不了是罕见的。一只7公斤重的野生忘不了至少10岁。
一般来说,口感最好的忘不了重量约5至10kg之间,通常是推荐的。
野生忘不了有三个特征:尖头、凸头和凸背、头和背连接处外的小隆起和可见的鱼腹。
野生忘不了的饮食主要是Combretocarpus(中文常称为风车果,在马来语中则被称为Emkabang),这导致鱼的肉带有一丝风车水果的味道。这也就是为什么当地民众称这条鱼为“忘不了”. 蒸或煎是烹调这价格昂贵的美味佳肴的理想烹饪方法。
野生忘不了鱼鳞可以油炸,作为另一道类似薯片的美食,与鱼一起食用。
