Sevruga Caviar are produced by Acipencer Stellatus and Acipencer Precious or Persian Sturgeons. These Sturgeons are smaller in both body and caviar size. The females take a shorter time, 5 years to produce caviar and up to 9 years of age depending on the water’s mineral and habitat. The taste can be described as distinguished, smooth and buttery; some descried it as aromatic and savoury with an intense sea taste.
