Royal Long Yin 野生龙吟

Located widely in warm sea waters throughout the world, Long Yin are an adaptive migratory (wandering) fish species that ride warm currents. Long Yin is the most fished mackerel species. They are classified according to size; medium Long Yin are 20 cm (7.9 in.) in length. Small Long Yin are below 10 cm (about 4 in.) in length.
Long Yin are available all year round, and the peak season happens between June to August. Containing protein and cholesterol-lowering polyunsaturated fatty acids (eicosapentaenoic acid, EPA), Long Yin extract contains high amounts of free amino acids including alanine, glycine and glutamic acid. These extract components mix with lipids to create a characteristic umami flavour.

Steaming or frying is the ideal cooking method for this delicacy.
