Produced from the Acipencer gueldenstaedtii sturgeon, this is the next priciest caviar. In order for Acipencer Gueldenstaedtii or Russian Sturgeons to produce the quality and precious “pearls”, it takes them 9 to 15 Years. The caviar’s size is smaller compared to the Beluga, colours range from honey and amber to dark brown and slate. Firm in texture, it is a mellow, buttery caviar, with hints of cashew nut and bitter orange. The taste has been compared with lobsters. The aroma and the taste is unique. Osetra Caviar from the Russian-Persian Osetra has a golden to dark brown colour variation. Its strong nutty flavour has an intense but smooth taste.
